Salad Recipes Basic

Summer is here and that means it's time to start dining al fresco with friends and family. One of my favorite dishes to enjoy outside is a delicious pasta salad. It's light, refreshing and perfect for those hot summer days. Today, I want to share my go-to recipe for a Simple Summer Pasta Salad that always has my guests begging for more!

Ingredients

  • 1 pound of fusilli pasta
  • 1/2 a red onion, chopped
  • 1 pint of cherry tomatoes, halved
  • 1 can of sliced black olives, drained
  • 1/2 a cup of feta cheese, crumbled
  • 1/4 a cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of honey
  • Salt and pepper to taste

Directions

  1. Start by cooking your pasta according to the package instructions and then drain and rinse it with cold water.
  2. Next, chop your red onion and halve your cherry tomatoes.
  3. Then, in a large bowl, mix together the pasta, onion, tomatoes, olives, and feta cheese.
  4. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until everything is well coated and combined.
  6. Refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to meld together.

Now, no pasta salad is complete without a delicious side salad! I like to serve mine with a Simple Side Salad that's quick, easy, and oh-so-tasty!

Ingredients

  • 4 cups of mixed greens
  • 1/2 of a cucumber, sliced
  • 1 pint of cherry tomatoes, halved
  • 1/4 of a red onion, thinly sliced
  • 1/4 of a cup of balsamic vinaigrette dressing

Directions

  1. Start by washing and drying your mixed greens.
  2. Then, slice your cucumber, halve your cherry tomatoes, and thinly slice your red onion.
  3. In a large bowl, mix together the mixed greens, cucumber, cherry tomatoes, and red onion.
  4. Add in the balsamic vinaigrette and toss everything until it's well coated.
  5. Refrigerate the salad for at least 10 minutes before serving.

There you have it - two delicious and refreshing summer salads that are perfect for your next backyard BBQ or picnic. Add in some grilled chicken or shrimp, and you have a complete meal that's sure to impress. Enjoy!
