Pasta Recipes Creamy Tomato

Oh my, have I found the perfect recipe for a hearty pasta dinner! This Creamy Tomato and Chilli Pasta recipe from Tesco Real Food is to die for. I mean, who doesn’t love a little kick in their pasta dish? And the creamy tomato sauce just balances out the spice so perfectly. Definitely a meal that will impress your family or guests!

Ingredients:

  • 350g penne pasta
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 2 red chillies, deseeded and finely chopped
  • 400g can chopped tomatoes
  • 1 tsp dried oregano
  • 1 tsp sugar
  • 150ml double cream
  • 100g baby spinach
  • Parmesan cheese, grated, to serve
Creamy tomato and chilli pasta

To start, cook the pasta according to package instructions. While the pasta is cooking, heat up the olive oil in a frying pan over medium heat. Add the onion and cook for about 5 minutes, until softened. Add in the garlic and chillies and cook for another minute.

Add in the chopped tomatoes, oregano, and sugar. Bring to a simmer and let it cook for about 10 minutes, stirring occasionally.

Healthy creamy tomato spinach pasta

Once the tomato sauce has thickened, pour in the double cream and add in the baby spinach. Cook for another 2-3 minutes, until the spinach has wilted and the sauce is creamy.

Drain the cooked pasta and add it to the pan with the tomato sauce. Give everything a good stir and serve with grated Parmesan cheese on top. So much flavor in every bite!

This recipe is definitely going to be added to my weekly meal rotation. It’s a great balance of spicy, creamy, and comforting. Plus, it’s a great way to sneak in some veggies with the baby spinach. I highly recommend giving this Creamy Tomato and Chilli Pasta recipe a try!
